Benefits of the yolk, black beans, and avocado 

The key ingredients of this protein-packed salad are the egg, black beans, and avocado. While some salads may open up the appetite and leave you feeling hungry, this salad will do just the opposite. Almost all the nutrients and half of the protein is in the yolk of an egg. Avocados offer approximately 20 vitamins, minerals, and antioxidants, including vitamins K, C, E, B, potassium, and lutein. Black beans are classified as legumes and are a great source of fiber, protein, and folate. The black beans in this recipe are made with coconut milk giving it a rich and creamy texture that acts as a built-in salad dressing.


Creamy Coconut Black Beans 


2 cups black beans

1 can unsweetened organic coconut milk

2 cloves of garlic

3 cups of water

1 dash onion powder

1 dash black pepper

kosher sea salt to taste


Start by cleaning your black beans, before washing spread them out on a light colored plate or cooking surface to check for, and remove, small stones, debris or damaged beans. Next place the beans in a strainer, and rinse thoroughly under cool running water. To shorten the cooking time and make them easier to digest pre soak black beans overnight and be sure to place them in the refrigerator to avoid fermenting. Strain pre soaking water and add beans to a medium sized saucepan. Cover beans with fresh water, about 2 inches or so above the top of the beans. Next add smashed garlic cloves, a generous pinch of sea salt, a dash of black pepper and a dash of onion powder. Once beans have partially cooked and some of the water has evaporated add 1 can of unsweetened coconut milk and 1 tbsp unsalted butter. Cook beans until fork tender. 


Yoked Black Bean Salad


2 cups organic baby spring mix

1 avocado, halved

1 egg, halved

1/4 cup organic frozen corn

1/2 cup creamy coconut black beans 


Add 2 handfuls of organic baby spring mix to a bowl or plate along with a sprinkle of organic corn, 1/2 cup creamy coconut black beans, halved and sliced egg and avocado. Enjoy!
